Maison Colette

The design for Maison Colette was driven by a deep respect for the historical significance of the property, combined with a clear desire to create a modern, luxurious environment. The restaurant, with its 35 seats and a Chef’s Table for six, offers an intimate and exclusive dining experience, where guests are invited to enjoy a personal connection to the culinary artistry of Chef Vervloet. The private dining room, named ‘Salon Anna’, accommodates up to 20 guests and exudes warmth and intimacy, with carefully chosen details and soft lighting that set the tone for a truly special occasion.

One of the most integral elements of the design is lighting. Grain Designoffice’s signature Grain Collection, a curated selection of vintage lighting classics, was thoughtfully chosen to shape the atmosphere and add character to the space. These iconic light fixtures not only serve as artistic elements but also enhance the ambiance, subtly guiding the guest experience.

The five luxurious hotel rooms extend the refined atmosphere of the restaurant, merging vintage chic with modern comfort. Each room is designed to provide a serene, intimate retreat, with a carefully considered combination of textures, details, and design elements that evoke both style and relaxation.

In this project, the design and architecture work together to elevate the guest experience, creating an environment where fine dining, exceptional design, and hospitality coexist in perfect harmony. The result is a sophisticated, timeless space that reflects Chef Vervloet’s culinary vision while offering an unforgettable experience for those who step inside.
